Description:
Fresh and fruity with the characteristic varietal hints of the Grapes of origin with floral and fruit notes. Intense and persistent, with a good acidity, sparkling with long Charmat method, which gives persistence and aromatic to the palate.
Features:
Fruity, fresh, with an intense body with an intense but elegant acidity and a good flavor in the mouth typical of the variety, Brut, for palates that prefer cleanliness and freshness.
Harvest:
Traditional, in the month of September, before the grapes reach full maturity to capture freshness and the right acidity to prepare the base for the second fermentation for “foaming” before bottling.
Ground:
Sandy mixed with granite weathering, with acid PH
Aging / Aging:
The Vecchia Costa Spumante – Brut after alcoholic fermentation and a second fermentation of 60 days. for an elegant and persistent foaming process that favors varietal aromatic extraction, it is aged for 3 months in the bottle before being put on sale, and aging is not recommended to capture the most fruity notes.

Tasting Notes

Look straw yellow color with soft golden reflections, fine and persistent perlage.
Nose is fresh, inviting, characterized by floral notes of lime, citrus nuances of white peach and light spicy hints of green pepper.
Palate it is tense, crunchy, vertical, very drinkable. A trace of sapidity accompanies it until a very persistent finish.

Food Pairings
Excellent as an aperitif and to accompany throughout the meal with fresh and summer dishes also based on grilled shellfish.
